You can dredge them in seasoned flour but just rolling them into seasoned salt will ruin the oil, and the seasonings will burn and taste nasty. The first answer was pretty right on, however six flaggs probaly uses frozen fries so you could just use frozen fries, then season with Lawreys Aprile M repliedcut Fresh potatoes and soak in milk for at least 15 minutes remove and dry with paper towel (do not put into oil until you do this) place in hot oil cook as you would any other fresh fries they will be nice and crusty add your favorite season salt (or old bay season if you like) then top with microwave cheese whiz. There are two steps to making seasoned fries. First, with any french fries, you cook them twice. Peel and cut potatoes into even strips. Soak potatoes in cold water for 1 hour. Pat dry and fry in deep fat at 325° for 5 minutes. Drain. Now that you have the fries tempered, roll them while warm and still holding some grease in seasoned salt (or the mixture of your choice). If you want to be really decadent, mix some flour with the seasoning. Increase oil heat to 375° and fry until French fries are tender and nicely browned. Second, rinse them and dry them thoroughly before frying. Third, fry in high-quality, proper-temperature peanut oil. Fourth, fry once to cook the outside, then let rest. Fifth, after resting, cook a second time. The fries will be crisp on the outside and hot and fluffy on the inside. Finally, season liberally with Lowrey's Seasoned Salt. |
